Does Honey Go Bad?
Not normally. Honey can ferment if it is harvested incorrectly and there is too much moisture in it. Fermentation will have a yeasty and or alchohol type odor. Otherwise, your honey will be fine for many years, but it may crystallize; and if it does, it is still fine.
What do I do with crystallized honey?
Crystallized honey is a natural occurance because of the amount of glucose in honey. Some honeys do not crystallize. Some honey crystallizes after a short time, others over a long time. If your honey should crystallize before you use it, place the bottle or jar in a pan and fill the pan until the water comes to where the honey is in the bottle, or an about inch above that line if it is less than 3/4 full. Remove the bottle from the water. Place the pan on the stove and bring the water to a boil and then remove from the heat. Let the boiling water stand and cool for at least 3 minutes, but no more than 5 minutes. Open the bottle/jar of honey and place into the water. Your water will be at the optimum temperature for bringing the honey out of crystallization.
If you have an induction burner just set you temperature to 105-130 degrees and let place the jar in the pan of water once it is heated.
Be aware that heating honey to over 140 degrees will seriously degrade your honey. Also, plastic bottles may deform in water over 115°.
Should I Refrigerate My Honey?
No. Honey should be stored in a cool, dry and dark cabinet in a tightly sealed container. It will remain wholesome for decades.
